Baerii Caviar
Acipenser baerii, also known as Siberian sturgeon, is a species of sturgeon native to the rivers of Siberia, including the Yenisei, Khatanga, Lena, and Indigirka.
Geographic distribution of Siberian sturgeon has been reported in Russia, Kazakhstan, and China.
Siberian sturgeon can reach a maximum length of 2 meters and a maximum weight of 210 kilograms (463 lbs), but usually weighs no more than 65 kilograms (143 lbs). Siberian sturgeon can live up to 60 years.
In this species, mature between 7 and 10 years of age.
The grains of caviar are on average between 2.5 to 3 millimeters in size.
