This caviar is extracted from stellatus fish, which is known as Ozon burun in Iran.  Its scientific name is (Acipenser Stellatus).  The maximum diameter of the caviar roes is 2.9 mm and its color is light gray to charocoal gray.

The roes of this caviar are smaller than other fish and have a pleasant taste.

The main population of Ozon Burun lives in the Caspian Sea, which is distributed along the entire length of the southern and northern coasts of the Caspian Sea.

The maximum body length of this fish is 218 cm and the maximum weight is up to 80 kg (175 lbs), but most of them have a length between 100 to 120 cm and a weight of 8 to 10 kg (17.6 to 22 lbs).

In this type of fish, female fish are bigger than male fish of the same age.

Male fish mature at the age of 9 to 13 years and female fish at the age of 10 to 15 years.  They live up to 41 years old.
